Pe vremea comunismului de dinainte de ’89 (deci nu ăsta de amu), când nu pre se găsa mâncare, ominii trebuieu să improvizeze cu ce aveu prin cămară. Cre’ că asta o contribuit la dezvoltarea bucătăriei ardeleneşti. Mama, de exemplu, făce tocană de ceapă. Era foarte bună, chiar dacă mă mai dure stomacu’ când haleam pre mult. Când aveam noroc, în tocană se pune şi câte un cârnaţ afumat. Asta îi reţeta lu’ mama, fără îngroşală, aşe cum o ţâu io minte.
During communism before ’89 (so we’re not talking the present communism), when food was not enough, people had to improvise with what they had in storeroom. I think this was the great impulse that led to the development of the transylvanian cuisine. My mother, for example, used to make onion stew. It was really good, although sometimes my stomach hurt because I ate too much. When we were lucky, the stew contained also smoked sausages. This is my mother’s recipe, with no thickener, as I remember it best.
